"Saudi Kabsa Casserole: Spiced rice and tender meat baked together."

Ingredients:

  • Oil.
  • Chopped onion.
  • Two minced garlic cloves.
  • Half a cinnamon stick.
  • Two bay leaves.
  • Two cardamom pods.
  • Two dried limes.
  • Lamb shank.
  • A pinch of meat spices.
  • Half a kilo of tomatoes, blended with a pinch of salt and sugar.

    For the rice:
  • Two cups of Basmati rice.
  • A tablespoon of ghee.
  • Nuts and raisins.

Instructions:

1. Heat oil in a pan, then add chopped onion and stir for two minutes.


2. Add two minced garlic cloves, half a cinnamon stick, bay leaves, cardamom pods, and dried limes.


3. Add the lamb shank and brown on all sides, seasoning with a pinch of meat spices.


4. Add half a kilo of blended tomatoes, season with salt and sugar, and mix well.


5. Pour in boiling water and let it cook for one hour, then remove the lamb shank.


6. Add the washed Basmati rice in place of the lamb shank, then reduce the heat.


7. Place the lamb shank under the broiler in the oven, adding butter for a crispy top.


8. Serve the rice on a plate, garnish with nuts, and place the lamb on top. Enjoy!
