Ingredients:
- 500 grams of lamb meat
Meat Spices: - Salt: 1 teaspoon.
- Turmeric: 1 teaspoon.
- Dried coriander: 1 teaspoon.
- Red chili powder: 1/2 teaspoon.
Additional Spices: - Biryani masala: 1 teaspoon.
- Crushed ginger: 1 teaspoon.
- Ground cardamom: 1/4 teaspoon.
- Anise flower (if available).
- Cinnamon: 1/2 teaspoon.
- Caraway seeds: 1/4 teaspoon.
- Black pepper: 1/4 teaspoon.
- Chopped mint leaves.
- Chopped fresh coriander.
- Diced papaya (optional).
- Yogurt: 1 tablespoon.
- Lemon juice.
- Cashews.
- Fried onion slices.
Rice Spices: - Salt.
- Whole black pepper.
- Cardamom.
- Bay leaves.
- Cinnamon.
- Cloves.
- Anise flower.
Instructions:
1. Prepare the meat and add the spices. Let it sit for 30 minutes.
2. Prepare the rice and add the rice spices. Let it sit for 30 minutes.
3. Heat a pot, add the meat, and cook until it changes color. Then add the cashews and stir.
4. Add the fried onions, coriander, and mint on top.
5. Add 2 or 3 cups of hot water to cook the meat.
6. Soak a little saffron in hot water and rose water.
7. Once the meat is cooked, add the rice after draining it from the water.
8. Pour the saffron mixture and rose water over the rice, then add a tablespoon of ghee, and top with fried onions, coriander, and mint.
9. Cover and cook on low heat for 30 minutes.
