"Grilled Shish Tawook: A Skewer of Middle Eastern Flavors!"
Ingredients:
- 1/4 orange.
- 1/4 lemon.
- 5 garlic cloves.
- 1 tablespoon red pepper paste (Harissa).
- 1 tablespoon tomato paste.
- 1 tablespoon ketchup.
- 1 tablespoon mustard.
- 1 teaspoon dried coriander.
- 1 teaspoon cumin.
- 1 teaspoon white or black pepper.
- 1 teaspoon dried thyme.
- 1/2 teaspoon ginger.
- 1/2 teaspoon ground cardamom.
- 1 small crushed mastic grain.
- 1/4 cup vegetable oil.
- 2 tablespoons olive oil.
- 1 tablespoon salt.
Instructions:
1. Cut the chicken breasts lengthwise in half, then cut each half into 6 to 8 cubes, depending on the size of the breast. Place the cubes in a bowl.
2. Put the orange, lemon, garlic, red pepper paste, tomato paste, ketchup, mustard, yogurt, spices, and mastic in a food processor along with the oil, and blend them together well.
3. Add this mixture to the chicken, then add salt and olive oil, mixing everything together well. Cover and let it marinate for as long as possible. Prepare a baking tray and soak the skewers in water and vinegar to prevent them from burning.
4. Skewer the chicken cubes, place them in the oven for 25 minutes, and enjoy!
