Fattah: Egypt's Irresistible Culinary Gem, Steeped in Flavor and Tradition!"
Ingredients:
- Oil.
- Ghee.
- Half a cinnamon stick.
- Two bay leaves.
- Two cardamom pods.
- A whole black pepper.
- Mastic (optional).
- Meat.
- Chopped onion.
- Sugar.
- Boiling water.
- Salt.
- Minced garlic.
- Quarter cup white vinegar.
- Half a kilo of tomatoes.
- One tablespoon tomato.
- paste.
- One teaspoon salt.
- One teaspoon black pepper.
- One teaspoon dried.
- coriander.
- One teaspoon meat spices.
- A pinch of nutmeg.
- Half a teaspoon of sugar.
- Bread.
- One tablespoon olive oil.
- One cup of washed Egyptian.
- rice.
- Broth.
Instructions:
1. Put a little oil and a small piece of ghee in the pot.
2. Add half a cinnamon stick, two bay leaves, two cardamom pods, a whole black pepper, and if available, a little mastic.
3. Add the meat to get its initial sear in the pot.
4. Add the chopped onion with a little sugar and stir well.
5. Continue stirring until the onion wilts, then add boiling water to cover the meat and a little more.
6. Near the end of cooking, add the salt.
7. To prepare the Fattah sauce: put a little oil and a small piece of ghee in a pan, then add the minced garlic and stir.
8. Add a quarter cup of white vinegar and stir well.
9. Add half a kilo of chopped tomatoes and a tablespoon of tomato paste, then stir.
10. Add a teaspoon of salt, black pepper, dried coriander, spices, a pinch of nutmeg, and half a teaspoon of sugar, and leave it on low heat until it thickens.
11. To prepare the bread: mix the bread with salt, black pepper, and olive oil, then put it in the fryer to toast.
12. Remove the meat from the broth and use the broth to cook the rice.
13. In a pot, put a little oil and a small piece of ghee, then add a cardamom pod and half a cinnamon stick.
14. Add a cup of washed Egyptian rice and stir.
15. Add the broth to the rice and leave it on medium heat until the water is absorbed, then reduce the heat until it is fully cooked.
16. Take the meat and grill it in a small piece of ghee to give a nice aroma.
17. Arrange the traditional layers of the fattah and enjoy your meal.
