Akawi Tagine: A Flavor Explosion of Tender Meat and Savory Spices!

Ingredients:

  • Ghee.
  • Oil.
  • Beef Shank.
  • 2 Cloves of Garlic.
  • Pinch of Salt.
  • Paprika.
  • ¼ Teaspoon Black Pepper.
  • 2 Bay Leaves.
  • ½ Teaspoon Cardamom.
  • ½ Teaspoon Meat Spice Mix.
  • Pinch of Nutmeg.
  • 1 kg Tomatoes.
  • ½ Teaspoon Sugar.
  • Oil.
  • Sliced Onions.
  • Sliced Potatoes.
  • 1 Teaspoon Salt.
  • ½ Teaspoon Black Pepper.
  • ½ Teaspoon Meat Spice Mix.
  • Sliced Bell Peppers.
  • Tomato Slices.

Instructions:

1. In a pot on the stove, add a little ghee and oil, then add the beef shank and sear it on all sides.


2. Prepare the quick spice mix by combining pepper, garlic, salt, paprika, and black pepper, then crush them together.


3. Add the spice mix to the beef shank after searing, and stir for a bit.


4. Add 2 bay leaves, ½ teaspoon cardamom, ½ teaspoon meat spice mix, and a pinch of nutmeg, then stir well.


5. Add 1 kg of blended tomatoes, ½ teaspoon sugar, and a pinch of salt, and let the mixture cook over medium heat until it thickens.


6. In a small pan, heat a little oil and sauté the sliced onions and potatoes with 1 teaspoon salt, ½ teaspoon black pepper, and ½ teaspoon meat spice mix for 5 minutes until golden.


7. Place the onions and potatoes in the baking dish, then add the beef shank on top.


8. Garnish the top of the dish with sliced bell peppers, onions, and tomato slices.


9. Cover the dish with parchment paper and foil, and bake in the oven for 30 minutes.


10. Remove the foil and return the dish to the oven to roast for an additional 10 minutes.


11. Serve the dish hot with bread or rice as desired.
